I’ve often had family and friends ask me to whip up unusual desserts and challenge me to make exotic dishes because of which, I’ve ended up investing in tons of equipment, new ingredients, and raw material, tweaking and experimenting with recipes as I go. Feeding people brings me joy and that’s why you will often find me spending time in my kitchen. It’s one of these challenges and the sudden craving to eat something icy that has got me dabbling with healthy homemade ice creams this summer. There’s no better or tastier way to beat this wretched heat and I hope you’ll agree.
Most of us are avoiding store-bought varieties of ice creams because we are trying to stay healthy. You often keep that ice cream binge for the weekend (and that’s totally normal) so don’t fret. I’ve worked on two recipes that are luscious, decadent and oh so good for you. I know it may seem like healthy ice cream is an oxymoron but I promise I’ve fooled the most discerning palates. The best part you ask?! both these recipes have no added sugar.
So with my newest friend: my Ice Cream Churner, and a fridge full of fruit, dairy and nut milk, I’m all set for the summer. So far, it’s been a lot of fun working with new combinations, flavour profiles and textures. I hope you enjoy these recipes as much as I enjoyed making them for you.
700 grams of frozen mango cubes
150 ml of chilled coconut milk
1-2 tbsp maple syrup (or honey)
Pinch of salt
Add kaffir lime or a spoon of Malibu for an extra punch
This one is super easy to make and great if you like to gorge on mangoes in the summer. Cut the mango into bite-sized pieces and put them into the freezer the night before. Take out all the ingredients in a chilled metal bowl. Add them to the mixer and blend until the consistency is smooth. Freeze and serve chilled.
How good does this look?
Berry Frozen Yogurt
100 grams of frozen berries
250 ml Greek yoghurt
1 tsp honey/ agave/ maple syrup
Add some fresh basil or lemon juice for an extra punch
Blend all the ingredients together in a mixer until smooth
Freeze and serve!
